Peach Crumble

This is surely a no fail recipe- even for the most novice of cooks! So easy and ever so morish!

Ingredients

2 Cans tinned peaches, drained.
115g Plain flour
220g Sugar
1/4 Tsp Salt
1/2 Tsp Ground cinnamon
112g Unsalted butter

8"square dish (I used two small dishes), buttered

Preheat oven to 180c

1. Put the peaches in the buttered dish.

2. Sift together the dry ingredients and rub in the butter until mixture resembles breadcrumbs. Sprinkle on top of peaches. Place in oven and bake for 35-45 minutes until tops are golden and crispy.

3. Stand for 10 mins.

4. Serve warm with a scoop of vanilla ice cream.


Of course you can use apples in place of the peaches. Or plums or apricots or rhubarb...

Can also be eaten cold, which I personally prefer.

Chewy Peanut Butter Blondies

Ingredients

1/3 cup Butter
1/2 cup Creamy peanut butter
3/4 cup Packed brown sugar
2 Eggs
1 tsp Vanilla
1 cup Plain / all-purpose flour
1 tsp Baking powder
1/4 cup Mini chocolate chips (optional)

Preheat oven to 180°C. Lightly grease an 8-inch square pan.
Melt the butter over low heat. Whisk in the peanut butter and brown sugar. Leave aside to cool for a minute.
Whisk in the eggs and vanilla until smooth.
Stir in the flour and baking powder. Stir in the chocolate chips, if using.
Spread the mixture into the prepared pan, and bake for 20 – 25mins, or until a toothpick inserted in the center comes out clean.

Nutella Bread Pudding

Ingredients
12 Slices brioche bread (a little stale is good)
1 1/2 cups Nutella (I used a whole 400g jar!)
2 cups Light cream (I used single cream)
1/4 tsp Salt
1 tsp Vanilla extract
1 cup Sugar
3 Large eggs

Preheat oven to 170c. Grease a square 8" cake tin with unsalted butter.
Make 6 sandwiches. Cut each sandwich is 6 pieces. Squash the pieces in the pan.
Heat the cream, salt and vanilla extract in a small saucepan and heat until warm.
In a large bowl, whisk the eggs and sugar together.
Add the cream mixture into the egg mixture, whisking constantly as not to cook the eggs.
Pour mixture on bread. Cover with foil and bake for 30-40 mins. Remove foil after 20 mins.
Stand for at least 10 mins before serving.

Eat with custard or serve warm with vanilla ice cream!

Lemon Chiffon Cake

Buffalo Chicken Wings

My brother has me hooked on watching Man Vs Food. After a particular mouth watering episode I had an craving for buffalo wings and needed to scour the in-tar-net and find a recipe pronto.

Ingredients
20-25 Chicken wings (mixture of flats and drumsticks- you could disjoint the tip from the wing, but I don't because thats my favourite part!)
Salt and pepper to season
Vegetable/peanut oil for deep frying

6 tablespoons Cayenne Pepper Sauce
1/4 cup Margarine
1 tablespoon White vinegar
1/8 teaspoon Celery seed (I had celery salt and used that instead)
1/8 to 1/4 teaspoon Cayenne pepper (more or less to taste)
1/8 teaspoon Garlic salt
1 dash Black pepper
1/4 teaspoon Worcestershire sauce
1 to 2 teaspoons Tabasco sauce (more or less to taste)
(I added 1/4+ cup of Sugar because I wanted a sweetness along with the tanginess and hotness)

Prepare chicken wings and pat dry.

Season with salt and pepper.

Deep fry in batches for 10-15 minutes each time (ensure the meat is throughly cooked through).

While the chicken wings are frying, put all the ingredients in a small saucepan and cook on a low heat until the margarine (and sugar) has melted. Remove from heat.

Drain the cooked chicken wings on paper towels.

Pour the sauce on to a tray and toss the chicken wings in. Cover all the wings with the sauce.

You can choose to 'bake' the sauce on the chicken wings by placing the tray into a preheated oven (200c) for about 5 minutes. I like mine lightly coated with the sauce, that way the wings remain crispy. Or you could have it swamped in sauce like my bro, who basically drinks the stuff! It's THAT good!

Peanut Butter Chocolate Cake

For days when no ordinary chocolate cake will do.

Ingredients
235ml Water
30g White sugar
3g Salt
30ml Vegetable oil
125g Plain flour

Coating
Sugar
Cinnamon


Mix the sugar and cinnamon in a tray.

In a small saucepan, combine the water, sugar, salt and oil and bring to the boil. Remove from heat and stir in the flour, until mixture form a ball.

Heat oil in a pan.

Put mixture into a piping bag with a star shape nozzle.

When oil is hot, pipe long strips of dough in the oil, I used my finger to 'cut' the stripes from nozzle. Fry until golden and drain on paper towels before rolling in the sugar and cinnamon mixture.

(Note. I had to use 3 piping bags because they had burst while piping the strips into the oil, maybe material are better than the plastic ones I used. Please be careful when piping the dough in the hot oil, aim to pipe as close to the oil as possible as to prevent oil splashes. I used rubber gloves while handling the piping bag and piping into the oil)

Banana Bread

Ingredients
125g Unsalted butter, softened
175g Light soft brown sugar
2 Eggs
280g Plain four
1 tsp Baking soda
pinch of salt
125ml Milk
3 med Ripe bananas, mashed
1 tsp Vanilla extract
75g Walnuts (optional)


Preheat the oven 180c. Lightly oil the loaf tin (I use a 10 inches x 4 1/2 inches)

Cream butter and sugar until smooth.

Add one egg and beat well. Add the other egg and continue to beat well.

Sift in half of the flour with the soda and salt and mix well.

Mix in the milk then the remaining flour.

Fold the bananas into the mixture with the vanilla extract (and walnuts, if using)

Tip the mixture in the tin and level.

Bake for 1 hour until cake tester comes out clean and not sticky.

Cover the top with foil if it starts to brown too quickly.

Allow to cool for 20 minutes before turning out.

Dust with icing sugar and cut into thick slices to serve.

Chocolate Brownies

You'll need a 33cmx23cmx5cm baking tray lined with parchment paper

Ingredients
5 eggs
500g Caster sugar
120g Plain flour
100g Cocoa powder
250g Unsalted butter, melted
30g Dark chocolate, roughly chopped
30g Shelled walnuts, chopped (optional)


Preheat the oven to 170c.

Put the eggs and the sugar in a bowl and using a handheld electric whisk, beat until light and fluffy.

Add the flour and cocoa powder and beat until combined.

Pour in the melted butter and mix through.

Add the chocolate and walnuts (if using) and mix in by hand.

Spoon into a baking tray lined with parchment paper and bake for 30-35 mins or until the top is firm but the centre is still soft.

Leave to cool in the tray, then turn out on a wire rack.
