Peach Crumble
This is surely a no fail recipe- even for the most novice of cooks! So easy and ever so morish!

Recipe
Ingredients
2 Cans tinned peaches, drained.
115g Plain flour
220g Sugar
1/4 Tsp Salt
1/2 Tsp Ground cinnamon
112g Unsalted butter
8"square dish (I used two small dishes), buttered
Preheat oven to 180c
1. Put the peaches in the buttered dish.
2. Sift together the dry ingredients and rub in the butter until mixture resembles breadcrumbs. Sprinkle on top of peaches. Place in oven and bake for 35-45 minutes until tops are golden and crispy.
3. Stand for 10 mins.
4. Serve warm with a scoop of vanilla ice cream.
Of course you can use apples in place of the peaches. Or plums or apricots or rhubarb...
Can also be eaten cold, which I personally prefer.

Chewy Peanut Butter Blondies
Recipe
Ingredients
1/3 cup Butter
1/2 cup Creamy peanut butter
3/4 cup Packed brown sugar
2 Eggs
1 tsp Vanilla
1 cup Plain / all-purpose flour
1 tsp Baking powder
1/4 cup Mini chocolate chips (optional)
Preheat oven to 180°C. Lightly grease an 8-inch square pan.
Melt the butter over low heat. Whisk in the peanut butter and brown sugar. Leave aside to cool for a minute.
Whisk in the eggs and vanilla until smooth.
Stir in the flour and baking powder. Stir in the chocolate chips, if using.
Spread the mixture into the prepared pan, and bake for 20 – 25mins, or until a toothpick inserted in the center comes out clean.

Nutella Bread Pudding
Recipe
Ingredients
12 Slices brioche bread (a little stale is good)
1 1/2 cups Nutella (I used a whole 400g jar!)
2 cups Light cream (I used single cream)
1/4 tsp Salt
1 tsp Vanilla extract
1 cup Sugar
3 Large eggs
Preheat oven to 170c. Grease a square 8" cake tin with unsalted butter.
Make 6 sandwiches. Cut each sandwich is 6 pieces. Squash the pieces in the pan.
Heat the cream, salt and vanilla extract in a small saucepan and heat until warm.
In a large bowl, whisk the eggs and sugar together.
Add the cream mixture into the egg mixture, whisking constantly as not to cook the eggs.
Pour mixture on bread. Cover with foil and bake for 30-40 mins. Remove foil after 20 mins.
Stand for at least 10 mins before serving.
Eat with custard or serve warm with vanilla ice cream!

Eilleen's Birthday L.V Bag Cake
First order of the year. First time making a 3D bag cake.

L.V Speedy and Tiffany & Co ring box (the 'doughnut' pieces were for the candles)

Details.
The cake was a 3 layer vanilla sponge with a buttercream filling. The details were made with gum paste, fondant, edible lustre paint, and edible glue. Everything but the board was edible!

Robert's Car Themed Birthday Cakes
Jane wanted a pandan mix fruit cake and 20 chocolate cupcakes, with a car theme for little Robert's 2nd birthday. I came up with a hand moulded fondant car as a topper (with personalised number plate!) for the cake and with the cupcakes, I made road signs with fondant and edible ink and cut out his name with rolled fondant.
Rubbish lighting.
